Fruit sourced from 30 year old vines grown on sandy loam soils from the renowned Hunter Ridge Vineyard in Pokolbin.
Grapes were machine harvested in the cool of the early morning. The machine harvested fruit was immediately transported to our Hunter Valley Winery for processing. The grapes were pressed in our pneumatic membrane press and juice transferred to a stainless steel tank for cold settling.
The juice was then racked and innoculated with the DV10 yeast strain.
Post fermentation the wine was then heat and cold stabilised prior to a light fining with skim milk. The wine was then racked and filtered in preparation for an early bottling to maintain freshness.
