Fruit sourced from 30 year old vines grown on sandy loam soils from the renowned Hunter Ridge Vineyard in Pokolbin.
Grapes were machine harvested in the cool of the early morning.
Fruit was crushed and pressed with only the highest quality free run juice retained. The juice was then transferred to a selection of new and 1-3 year old French barrels for fermentation and maturation.
After 6 months of barrel ageing with regular lees stirring, the wine was transferred to tank for stabilisation prior to filtration and bottling.
