Situated east of Adelaide, the Adelaide Hills has a moderate maritime climate and is one of the most elevated and coolest grape growing regions in Australia.
Ample rainfall with warm summer days and mild evenings provide ideal conditons for varieties suited to cool climates.
Fruit was crushed and destemmed prior to pressing. Juice was then transferred to a combination of stainless-steel tank and older French oak for fermentation. Post fermentation the two components were blended and cold settled before stabilising and filtering in preperation for bottling.
